Creamy miso butter pasta is a simple way to elevate regular old buttered noodles adding only a few more ingredients. It is a flavorful and simple solution for a quick meal on a busy day.
Ingredients
• ½ lb pasta (spaghetti, ramen, or preferred pasta)
• 1 cup chicken stock (or ramen packet)
• ¼–½ cup reserved pasta water
• 1 tbsp white miso paste
• 2–3 tbsp butter
• 3–4 tbsp grated Parmesan cheese
• Chopped chives
Instructions
Begin by cooking the pasta according to the package directions, reserving about ¼ to ½ cup of the pasta water before draining. While the pasta cooks, add chicken stock to skillet or saucepan and reduce on high heat till 1/4 of stock remains. Add miso paste to stock and mix. Once the pasta is al dente, transfer it directly to the pan and toss with parmesan cheese and butter thoroughly to coat and to create a creamy sauce, adding more pasta water if needed. Serve immediately, garnished with chopped chives. Lastly enjoy!!
