This quick and easy meal is how to turn plain ol’ ramen into a flavor packed dish with only a few additional ingredients!!
Ingredients:
•1 pack instant ramen
•1 egg
•1 egg yolk
•1/3 cup parmesan cheese
•2-3 strips of bacon (chopped)
Ground pepper, to taste
Preparation:
In a small bowl, add one whole egg, one egg yolk and parmesan, then whisk until combined. (You can save the egg white or cook and eat for extra protein)
Next, you can begin to cook the ramen according to its instructions while omitting the seasoning packet. Be sure to save a little water.
Then, add chopped up bacon to a pan and cook until crispy. Once crispy remove the pan from the heat.
Once the ramen is cooked, drain and add to the pan. Add the egg mixture to the pan while stirring vigorously. The residual heat from the pan will turn the egg mixture into a delicious sauce. If the eggs are too hot or under-mixed, they may start to turn into scrambled eggs. If the sauce is a bit too thick, add a little of the saved ramen water until smooth and creamy.
Move ramen to a plate or bowl, top with additional cheese and pepper to taste.
