This is a good recipe when you’re craving a refreshing meal. I find it stays good for 2-3 days in the fridge! If you don’t want a creamy dressing, Italian works well.
Pasta Salad Recipe
16 oz Rotini Pasta
1 ½ cucumber
2 bell peppers
½ cup artichoke hearts (canned or marinated)
Cheese (feta, mozzarella, or parmesan all work well)
Avocado is good but doesn’t refrigerate well
Creamy Dressing Recipe
1/3 cup sour cream
½ cucumber
1 tbsp pesto
2 tsp lemon juice
1 tsp Italian seasoning
.5 tsp garlic powder or minced garlic
Salt and pepper to taste
Instructions:
Cook your pasta and rinse thoroughly to cool.
Cut vegetables to the shape and size you want
Blend all the dressing ingredients together.
Toss it all together and refrigerate leftovers.
