The ‘Between Classes’ Chocolate Mug Cake Between classes, study-sessions and group projects, baking a full dessert can feel unrealistic. But a slice of warm cake doesn’t have to require an oven or a full kitchen. This single-serve recipe is adapted from Julie Chiou of the blog “Table for Two”, with minor adjustments for a dorm-friendly version.
YIELD: 1 (generous) serving
PREP TIME: 1 minute
COOK TIME: 1 minute
TOTAL TIME: 2 minutes
YOU WILL NEED:
1 Microwave safe mug (approximately 14oz, wide mouth mugs work better to prevent batter overflow when cooking)
1 Fork (for mixing and eating)
INGREDIENTS:
¼ cup (31g) all purpose flour
2 tablespoon unsweetened cocoa powder
¼ teaspoon baking powder
2-3 tablespoon granulated sugar (add more for even sweeter result)
⅛ teaspoon kosher salt (generous pinch)
¼ cup (59ml) + 1 tablespoon milk
2 tablespoon vegetable oil
1 tablespoon Nutella or mini chocolate chips
INSTRUCTIONS:
1. Whisk together dry ingredients directly in a microwave safe mug (flour, cocoa powder, baking powder, salt).
2. Whisk in the milk and vegetable oil until all ingredients are combined and the batter has no clumps.
3. Add Nutella or mini chocolate chips to the center of the batter. Do not press down, it will sink as it bakes.
4. Microwave mug cake for 70-second on High. Baking time may vary depending on microwave wattage.
5. Carefully remove the mug from the microwave and let cool for one minute before eating.
6. Enjoy!
ADJUSTMENTS/SUBSTITUTIONS
No Nutella? Use chocolate chips.
No chocolate chips? Chop up a candy bar.
No vegetable oil? Melted butter works just fine.
